Eggplant dressing
Ingredients/Components
- eggs, beaten - 2 item
- grated cheese - 1 c
- salt and pepper to taste - 1 item
- dash of Worcestershire sauce - 1 item
- large eggplant - 1 item
- finely cut onions - 1 c
- light white sauce or 1 can chicken broth - 1 c
- cornbread fine or toasted bread - 1 c
How to make eggplant dressing:
Peel and cut eggplant in cubes; boil in water until tender, about 10 to 15 minutes. Drain and mash. Combine eggplant, white sauce, cheese, onions, seasonings and beaten eggs. (I sometimes use a cup of rice to make cornbread stick together. If using rice, add a little more liquid.)
