Ingredients/Components
- eggs, beaten - 3 item
- salt and pepper to taste - 1 item
- stick oleo - 1 item
- large onion - 1 item
- large eggplant - 1 item
- large bell pepper - 1 item
- can cream style corn - 1 item
- stack Saltine crackers - 1 item
How to make eggplant dressing:
Cube, boil and drain eggplant. Saut?© onion and bell pepper in oleo. Mix eggplant, saut?©ed veggies, corn, eggs, and crackers; add salt and pepper to taste.
