  • eggs, beaten - 3 item

  • large onion - 1 item
  • large eggplant - 1 item
  • large bell pepper - 1 item
  • can cream style corn - 1 item
  • stack Saltine crackers - 1 item

How to make eggplant dressing:

Cube, boil and drain eggplant. Saut?© onion and bell pepper in oleo. Mix eggplant, saut?©ed veggies, corn, eggs, and crackers; add salt and pepper to taste. Pour into casserole dish and top with Mozzarella cheese. Cover and bake for 1 hour at 350°.
