Eggplant dressing



  • ground beef - 1 2
  • salt and pepper to taste - 1 item
  • medium onion, chopped - 1 item
  • cooked rice or cornbread - 2 c
  • ground eggplant - 2 lb
  • medium bell peppers, ground - 2 item

How to make eggplant dressing:

Cook ground meat and onions together in skillet with a lid. When meat is cooked, add eggplant, bell pepper, and cooked rice (or cornbread). Salt and pepper to taste. Cook on low heat until eggplants and bell pepper are cooked. This will serve a family of five.
