Ingredients/Components

  • onion, finely chopped - 1 c
  • minced garlic - 1 tsp
  • can stewed tomatoes, drained - 1 item
  • medium eggplant - 1 item
  • diced bell pepper - 1/2 c
  • sausage, cooked and drained - 1 lb
  • sharp shredded cheese - 1 c
  • slices toasted bread cubes - 4 item

How to make eggplant casserole:

Peel and cube eggplant. Cook in water until tender. Drain. Mix in rest of ingredients. Bake in greased casserole dish until cheese melts in a 350° oven.
