Ingredients/Components
- onion, finely chopped - 1 c
- minced garlic - 1 tsp
- can stewed tomatoes, drained - 1 item
- medium eggplant - 1 item
- diced bell pepper - 1/2 c
- sausage, cooked and drained - 1 lb
- sharp shredded cheese - 1 c
- slices toasted bread cubes - 4 item
How to make eggplant casserole:
Peel and cube eggplant. Cook in water until tender. Drain. Mix in rest of ingredients. Bake in greased casserole dish until cheese melts in a 350° oven.Recipe categories: Side dish, Vegetables, Casseroles.
