Ingredients/Components
- pkg - 1 oz
- large eggplant, peeled & cubed - 1 item
- jar marinara sauce or your favorite spaghetti sauce - 1 oz
- grated parmesian cheese - 1/3 c
How to make eggplant casserole:
Cook eggplant in boiling water 5 minutes - drain. Place in lightly greased 1 1/2 qt. casserole; add mozzarella cheese & top with marinara or spaghetti sauce. Bake at 350 degrees for 30 minutes.
