Holiday mashed potatoes



  • about 12 medium potatoes, peeled, cooked and hot - 3 lb
  • pkg - 1 oz
  • oleo - 1/4 c
  • sour cream - 1/2 c
  • milk - 1/2 c
  • eggs, slightly beaten - 2 item
  • finely chopped onion - 1/4 c
  • salt - 1 tsp
  • onion salt - 1/2 tsp

How to make holiday mashed potatoes:

In a large mixer bowl, mash hot potatoes. When all lumps are removed, add cream cheese in small pieces and then the butter. Beat well. Mix in sour cream to the milk; add the eggs and onion. Add to the potato mix along with salt and pepper. Beat well until light and fluffy. Place in a greased 9-inch round casserole and refrigerate several hours or overnight. Bake in a preheated 350° oven for 45 minutes or until lightly brown on top.
