Cream of wild rice soup
Ingredients/Components
- half and half - 1 c
- flour - 3/4 c
- butter - 4 Tbsp
- salt and pepper to taste - 1 item
- large onion, diced - 1 item
- green pepper, diced - 1/2 item
- hot chicken broth - 6 c
- fresh mushrooms, chopped - 1/2 c
- cooked wild rice - 2 c
- celery ribs, diced
- slices bacon, chopped - 4 item
- white wine or dry sherry optional
How to make cream of wild rice soup:
Prepare wild rice according to basic directions on package. Saute bacon to extract drippings, then add butter, onion, green pepper, celery and mushrooms. Continue sauteing until vegetables begin to soften. Stir in flour. Slowly add chicken broth, stirring to make a smooth mixture.Add cooked rice and season to taste. Heat thoroughly; stir in half and half and wine. Heat gently; do not boil.
