  • flour - 3 Tbsp
  • butter - 6 Tbsp
  • light cream - 3/4 c
  • chicken broth - 3 c
  • pepper to taste - 1 item
  • medium onion, chopped - 1 item
  • fresh mushrooms, chopped - 1/2 lb

How to make cream of mushroom soup:

Melt butter in a saucepan. Add onion and cook over moderate heat until onion is soft. Add mushrooms; cover pan and cook several minutes. Remove mixture from heat and blend flour. Add stock slowly; bring mixture to a boil. Reduce heat and simmer for 5 minutes. Stir in cream. Serves 6.
