Cream of peanut soup



  • flour - 3 Tbsp
  • butter - 1/4 c
  • light cream
  • smooth peanut butter - 2 c
  • medium onion, chopped - 1 item
  • chicken stock - 2 qt
  • ribs celery, chopped - 2 item
  • salted peanuts, chopped - 1 item

How to make cream of peanut soup:

Saute onion and celery in butter until soft, but not brown. Stir in flour until well blended. Add chicken stock, stirring constantly, and bring to a boil. Remove from heat and puree in a food processor. Add peanut butter and cream, stirring to blend thoroughly. Return to heat until just hot, but do not boil.

Serve garnished with chopped peanuts. Also good served cold. Yields 10 to 12 servings.
