Turkey wild rice soup
Ingredients/Components
- salt - 1 tsp
- flour - 1/2 c
- butter - 1/2 c
- water - 1 qt
- vegetable oil - 1 Tbsp
- light cream - 2 c
- pepper - 1/4 tsp
- chicken broth - 3 c
- medium onion, chopped - 1 item
- rosemary - 1/2 tsp
- diced cooked turkey - 2 c
- uncooked wild rice - 1/3 c
- carrot, finely chopped - 1 item
- celery stalk, finely chopped - 1 item
How to make turkey wild rice soup:
Rinse rice and drain. In medium saucepan, combine rice, oil and water; bring to a boil. Reduce heat; cover and simmer for 30 minutes. Meanwhile, in a large kettle, cook onion, celery and carrot in butter until vegetables are almost tender. Blend in flour; cook and stir 2 minutes. Add broth and undrained rice. Bring to a boil; cook and stir until slightly thickened. Stir in remaining ingredients.
