Ingredients/Components

  • salt - 1/2 tsp
  • butter - 2 Tbsp
  • water - 1 c
  • can chicken broth - 1 item
  • curry powder - 3/4 tsp
  • clove garlic - 1 item
  • onion - 1 item
  • bunch broccoli - 1 item
  • to 2 potatoes - 1 item
  • half and half could use 1% or 2 % milk - 1 c

How to make cream of broccoli soup:

Trim broccoli and pare stems. Separate flowerets. Cut stems into 1/2-inch slices. Cut potatoes in 1/2-inch cubes. Saute onion and garlic in butter in a kettle until tender, about 3 minutes. Add curry powder, chicken broth, water and salt to kettle. Bring to boil and add broccoli and potatoes. Return to boiling. Lower heat. Cover. Simmer 20 minutes. Puree mixture in blender and stir in half and half.
