Ingredients/Components

  • sugar - 1 c
  • butter or margarine - 1/4 c
  • salt - 1 tsp
  • baking powder
  • baking soda - 1/2 tsp
  • sifted flour - 2 c
  • egg, beaten - 1 item
  • grated orange peel - 1 tsp
  • orange juice - 3/4 c
  • fresh or frozen cranberries, chopped
  • light raisins*

How to make cranberry bread:

Sift flour, sugar, baking powder, salt and soda in to large bowl. Cut in butter or margarine until mixture is crumbly. Add egg, orange peel and orange juice, all at one time. Stir just until mixture is evenly moist. Fold in raisins (*if desired) and cranberries. Spoon into a greased 9 x 5-inch loaf pan. Bake at 350° for 1 hour and 10 minutes or until toothpick inserted in center comes out clean. Remove from pan. Cool on wire rack.

(*Additional cranberries can be substituted for raisins.)
