Ingredients/Components

  • sugar - 1 tsp
  • cornstarch - 2 Tbsp
  • vegetable oil - 3 Tbsp
  • lemon juice - 2 Tbsp
  • soy sauce - 2 Tbsp
  • chicken broth - 1/2 c
  • salt and pepper - 1 item
  • hot cooked rice - 4 c
  • green pepper, chopped - 1 item
  • green onions, chopped - 2 item
  • chicken, cut up - 1 item
  • frozen broccoli, thawed - 1 pkg
  • ripe tomatoes, cut in eighths - 2 item

How to make chinese chicken and vegetables:

Spread chicken pieces on wax paper. Brush with lemon juice. Sprinkle with salt and pepper. Heat oil in large skillet. Add chicken; brown quickly on all sides. Drain oil. Add sugar, green pepper, onions, broccoli and chicken broth. Bring to boil; lower heat, cover and simmer for 10 minutes. Blend cornstarch and soy sauce; gradually stir in and mix well. Simmer briefly until thickened. Serve over rice.
