  • sugar - 1 item
  • eggs - 2 item
  • oil - 1 item
  • Parmesan cheese - 1/2 c
  • bay leaf - 1 item
  • bread crumbs
  • Mozzarella cheese - 1 item
  • oregano to taste - 1 item
  • boneless chicken breasts - 6 item
  • clove of garlic - 1 item
  • paste - 2 Tbsp
  • whole, peeled tomatoes - 2 c
  • Tomato Sauce:1 onion

How to make chicken saltimbocca:

Tomato Sauce:1 onion1 clove of garlic2 c. whole, peeled tomatoes2 Tbsp. paste1 bay leaf sugar oregano to taste Combine bread crumbs and Parmesan cheese. Dip chicken in beaten egg and then coat in bread crumb mix. Fry breast in oil for 5 minutes on each side. Arrange chicken in ovenproof serving dish. Pour Tomato Sauce over chicken. Top with Mozzarella cheese. Bake at 350° for 15 minutes until cheese is melted. Serves 6.

Tomato Sauce: Saute onion and clove of garlic. When soft add whole, peeled tomatoes and paste, bay leaf, sugar and oregano to taste. Simmer until reduced by half.

This is great with salad and spaghetti.
