Ingredients/Components

  • milk - 2/3 c
  • flour - 1/3 c
  • margarine - 1/3 c
  • chopped onion - 1/3 c
  • chicken broth
  • salt and pepper to taste - 1 item
  • mixed vegetables - 1 c
  • cooked chicken, cut up - 2 c

How to make chicken pot pie:

Heat margarine over low heat, add onion; saute. Blend in flour, salt and pepper. Cook over low heat, stirring constantly until smooth and bubbly. Remove from heat, stir in broth and milk. Heat to boiling, stirring constantly. Boil and stir one minute. Stir in chicken and vegetables.

Prepare crust as for 2-crust pie. Pour filling into crust-lined 10-inch pie pan. Cover with remaining crust, flute edges and slit center. Bake, uncovered, at 425° until brown, 30 to 35 minutes.

The gravy mixture is also good over mashed potatoes.
