Chicken bombay
Ingredients/Components
- salt - 3 tsp
- butter - 4 Tbsp
- pepper - 1 tsp
- clove garlic, minced - 1 item
- curry powder - 1/4 tsp
- whole chicken breasts - 6 item
- oregano - 1/4 tsp
- large onion, thinly sliced - 1 item
- chopped parsley - 1 tsp
- Tabasco sauce - 1/4 tsp
- green pepper, chopped - 1 item
- large can Italian tomatoes - 1 item
- cans chopped mushrooms - 2 oz
How to make chicken bombay:
Remove skin and bones from chicken. Cut into 1-inch pieces and put into 2 large skillets with 2 tablespoons butter in each. Saute until light gold. Remove chicken; add onion to fat in one pan. Cook until tender. Add remaining ingredients, mashing tomatoes with spoon. Add all chicken. Cover and simmer for 15 minutes, stirring occasionally, until chicken is tender. If you are preparing in advance, simmer only 5 minutes, then cool and refrigerate (may be frozen). Simmer 15 minutes or so. Serve hot over rice.Recipe categories: Chicken, Main dish, Curries.
