Chicken bombay
Ingredients/Components
- ginger - 1/4 tsp
- raisins - 1/2 c
- oleo - 1/4 c
- curry powder - 1 Tbsp
- salt and pepper - 1 item
- medium onion, chopped - 1 item
- cooked rice - 2 c
- Granny Smith apple - 1 item
- chicken pieces, skinned breast or thigh - 6 item
How to make chicken bombay:
Melt oleo in 2-quart oblong casserole in 350° oven. Remove from oven. Stir in curry powder and ginger. Place 6 chicken pieces (thick side down) in pan. Season with salt and pepper. Top with onion, apple and raisins. Cover and bake at 350° for 30 minutes. Turn chicken and cook, uncovered, until tender. Remove from pan. Add rice to sauce in pan. Put chicken on top of rice.
