Chicken and pasta
Ingredients/Components
- flour - 2 tsp
- vegetable oil - 2 Tbsp
- pepper - 1/2 tsp
- skim milk - 1 c
- dried basil, crushed - 1 tsp
- cloves garlic - 2 item
- Parmesan cheese, grated - 4 Tbsp
- cherry tomatoes, halved - 8 item
- pasta, cooked - 4 c
- medium zucchini and summer squash, halved lengthwise and cut into 1/4 inch slices - 1 item
- chicken breasts, skinned, boned and cut into bite-size pieces - 1 lb
How to make chicken and pasta:
Spray a large skillet with nonstick coating. Add zucchini and summer squash and cook until crisp-tender. Remove from skillet. Add oil, chicken, garlic, basil and pepper to skillet. Cook and stir until chicken is tender. Combine milk and flour; add to skillet. Cook and stir until thickened and bubbly. To serve, gently toss together chicken mixture, pasta, vegetables and Parmesan cheese.Recipe categories: Chicken, Pasta, Main dish.
