Ingredients/Components

  • milk - 3 c
  • salt - 1/4 tsp
  • butter - 1/4 lb
  • cornstarch - 1 Tbsp
  • water - 1/2 c
  • boiling water - 2 c
  • pepper - 1/8 tsp
  • parsley - 1 Tbsp
  • croutons - 1 c
  • chicken bouillon cubes - 2 item
  • grated Mozzarella cheese - 1/2 c
  • beaten egg yolks - 2 item
  • slices onion - 4 item
  • dash of mace - 1 item

How to make cheese soup:

In a cup, dissolve cornstarch in water. In a bowl, dissolve bouillon cubes in boiling water. In a pot, combine onion and butter. Cook slowly until soft. Add cornstarch, bouillon and milk. Cook slowly, stirring often, until heated. Add mace, salt and pepper.

In a bowl, blend egg yolks, cheese and 1 cup soup. Add cheese mixture to pot. Garnish with parsley and croutons. Serve immediately. Serves 6.
