Potato cheese soup
Ingredients/Components
- milk - 2 c
- salt - 1 tsp
- butter - 2 Tbsp
- pepper - 1/4 tsp
- chopped onion - 1/3 c
- chopped celery - 1/3 c
- chicken broth - 3 c
- dash of paprika - 1 item
- shredded Cheddar cheese - 2 c
- parsley - 1 item
- croutons - 1 item
- peeled, diced potatoes - 4 c
How to make potato cheese soup:
In large pan, melt butter over medium-high heat. Saute onion and celery until tender. Add potatoes and broth. Cover and simmer until potatoes are tender, about 12 minutes. In batches, puree potato mixture in processor. Return to pan. Stir in milk and seasonings. Add cheese and heat only until melted.
