Ingredients/Components

  • medium potatoes - 10 item
  • diced celery - 1 c
  • medium onion, diced - 1 item
  • salt - 1 tsp
  • enough water to cover potatoes and vegetables - 1 item
  • pepper - 1/8 tsp
  • water - 1/4 c
  • cornstarch - 1/4 c
  • butter - 4 Tbsp
  • hard-cooked eggs - 3 item
  • light cream - 1 c
  • milk
  • chopped parsley - 1 Tbsp
  • crushed corn - 1 c
  • whole corn - 1 c
  • diced bacon - 1/2 lb

How to make corn chowder:

Peel and dice potatoes, onions, celery, salt and pepper. Add water. Bring to boiling point, reduce heat and simmer 20 to 25 minutes. Mix cornstarch with water, add to soup while boiling, simmer a few minutes. Add parsley. Add milk, cream, butter, chopped eggs, 3/4 teaspoon salt, crushed corn and whole corn and fried, diced bacon. Heat slowly, do not boil. Serve hot.
