  • cinnamon - 2 tsp
  • cream cheese - 8 oz
  • eggs - 4 item
  • vanilla - 1 tsp
  • chopped pecans
  • salt - 1/2 tsp
  • flour - 2 c
  • oil
  • grated carrots - 3 c
  • baking powder - 1 tsp
  • baking soda - 2 tsp
  • stick butter - 1 item
  • box powdered sugar - 1 item
  • pecans, chopped - 1 c
  • sugar or 1 c - 2 c

How to make carrot cake:

Icing:1 c. chopped pecans1 box powdered sugar8 oz. cream cheese1 stick butter1 tsp. vanilla Mix all dry ingredients together. Add oil, eggs and vanilla and blend well. Bake in three 9-inch cake pans at 350° approximately 30 minutes.

Icing: Cream the cream cheese and butter. Add sugar, vanilla and pecans. Blend well. Add milk if necessary to spread.
