  • baking soda - 2 tsp
  • cinnamon - 2 tsp
  • salt - 1 tsp
  • sugar - 2 c
  • grated carrots - 3 c
  • oil
  • eggs - 4 item
  • chopped nuts - 1/2 c
  • cream cheese
  • vanilla - 2 tsp
  • box powdered sugar - 1 item
  • stick butter - 1/2 item

How to make carrot cake:

Icing:8 oz. cream cheese2 tsp. vanilla1 box powdered sugar1/2 stick butter Cake: Sift dry ingredients together; add oil and eggs. Beat 1 minute. Add carrots and nuts. Beat 1 1/2 minutes. Bake at 300° in 3 (9-inch) pans or a 13 x 9-inch pan, about 35 to 40 minutes.

Icing: Mix cream cheese and butter. Add powdered sugar and vanilla.
