Ingredients/Components
- plain flour - 2 c
- soda - 1 tsp
- baking powder - 1 tsp
- grated carrots - 3 c
- cinnamon - 1 tsp
- sugar - 2 c
- vegetable oil
- eggs - 4 item
- Add eggs, one at a time, beating after each addition
- box confectioners sugar - 1 item
- chopped pecans - 1/2 1
- stick margarine - 1 item
- vanilla - 2 tsp
How to make carrot cake:
Mix dry ingredients; add oil and blend. Add eggs, one at a time, beating after each addition. Add carrots and blend well. Pour equal amounts into prepared 3 layer pans and bake at 350° for 30 minutes or in prepared 13 x 9-inch pan for 1 hour.Icing:1 (8 oz.) pkg. cream cheese1 box confectioners sugar1/2 to 1 c. chopped pecans1 stick margarine2 tsp. vanilla Blend cream cheese and butter.
