Ingredients/Components

  • plain flour - 2 c
  • soda - 1 tsp
  • baking powder - 1 tsp
  • grated carrots - 3 c
  • cinnamon - 1 tsp
  • sugar - 2 c
  • vegetable oil
  • eggs - 4 item
  • Add eggs, one at a time, beating after each addition
  • box confectioners sugar - 1 item
  • chopped pecans - 1/2 1
  • stick margarine - 1 item
  • vanilla - 2 tsp

How to make carrot cake:

Mix dry ingredients; add oil and blend. Add eggs, one at a time, beating after each addition. Add carrots and blend well. Pour equal amounts into prepared 3 layer pans and bake at 350° for 30 minutes or in prepared 13 x 9-inch pan for 1 hour.Icing:1 (8 oz.) pkg. cream cheese1 box confectioners sugar1/2 to 1 c. chopped pecans1 stick margarine2 tsp. vanilla Blend cream cheese and butter. Add confectioners sugar and vanilla. Mix well and add nuts. Spread evenly over top and sides of cake.
