Hummingbird cake
Ingredients/Components
- butter, softened - 1/2 c
- sugar - 2 c
- cinnamon - 1 tsp
- vanilla
- chopped pecans - 2 c
- salt - 1 tsp
- soda - 1 tsp
- buttermilk
- can crushed pineapple - 1 oz
- plain flour - 3 c
- box confectioners sugar - 1 item
- eggs, well beaten - 3 item
- Wesson oil
- bananas, mashed - 2 c
- Combine dry ingredients in large bowl
How to make hummingbird cake:
Preheat oven to 350°. Combine dry ingredients in large bowl. Add eggs and oil, stirring until moistened. Stir in vanilla, pineapple, bananas and 1 cup nuts. Spoon batter into prepared cake pans (3 layers). Bake for 25 to 30 minutes. Cool in pans for 10 minutes.Note: To prepare cake pan, spray with Pam.Frosting:1 (8 oz.) pkg. cream cheese, softened1 box confectioners sugar1/2 c. butter, softened1 tsp. vanilla1 1/2 tsp. buttermilk Combine cream cheese and butter. Cream until smooth. Add confectioners sugar and beat until light and fluffy. Add vanilla and buttermilk. Spread frosting between layers and on top and sides. Sprinkle remaining nuts on top and sides of cake.
