  • sugar - 2 c
  • cinnamon - 1 tsp
  • cream cheese
  • eggs - 4 item
  • vanilla - 2 tsp
  • chopped pecans - 1/2 c
  • flour - 2 c
  • stick margarine - 1 item
  • soda - 1 tsp
  • grated carrots - 3 c
  • baking powder - 1 tsp
  • vegetable oil
  • box powdered sugar - 1 item
  • can coconut - 1 item

How to make carrot cake:

Frosting:8 oz. cream cheese1 box powdered sugar1 stick margarine2 tsp. vanilla1 can coconut1/2 c. chopped pecans Mix dry ingredients. Add oil and blend. Add eggs, one at a time, and beat after each addition. Add carrots and blend well. Pour into two 8-inch or one 9 x 13-inch pan. Bake 30 minutes at 350°. Cool.

Frosting: Blend cream cheese, powdered sugar, margarine and vanilla. Add coconut and chopped pecans. Mix thoroughly. If 9 x 13-inch pan is used, half of frosting is enough.
