Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- cream cheese
- eggs - 4 item
- vanilla - 2 tsp
- chopped pecans - 1/2 c
- flour - 2 c
- stick margarine - 1 item
- soda - 1 tsp
- grated carrots - 3 c
- baking powder - 1 tsp
- vegetable oil
- box powdered sugar - 1 item
- can coconut - 1 item
How to make carrot cake:
Frosting:8 oz. cream cheese1 box powdered sugar1 stick margarine2 tsp. vanilla1 can coconut1/2 c. chopped pecans Mix dry ingredients. Add oil and blend. Add eggs, one at a time, and beat after each addition. Add carrots and blend well. Pour into two 8-inch or one 9 x 13-inch pan. Bake 30 minutes at 350°. Cool.Frosting: Blend cream cheese, powdered sugar, margarine and vanilla. Add coconut and chopped pecans. Mix thoroughly. If 9 x 13-inch pan is used, half of frosting is enough.
