Ingredients/Components

  • sugar - 2 c
  • cinnamon - 1 tsp
  • eggs - 4 item
  • vanilla - 2 tsp
  • salt - 1/4 tsp
  • chopped nuts - 1 c
  • stick margarine - 1 item
  • soda - 1 tsp
  • grated carrots - 2 c
  • baking powder - 1 tsp
  • vegetable oil
  • plain flour - 2 c
  • box sifted confectioners sugar - 1 item
  • Beat eggs and oil together

How to make carrot cake:

Sift first 5 ingredients together. Beat eggs and oil together. Combine with dry ingredients and fold in carrots. Bake in 3 layers at 375° for 25 minutes.Icing:1 (8 oz.) pkg. cream cheese1 stick margarine1 box sifted confectioners sugar2 tsp. vanilla1 c. chopped nuts Mix first 4 ingredients. Add pecans and you are ready to ice your cake.
