Ingredients/Components

  • flour white or whole wheat - 2 c
  • sugar or 1/2 c - 2 c
  • baking powder - 2 tsp
  • baking soda
  • cinnamon - 5 tsp
  • salt - 1 tsp
  • salad oil or 1 c
  • eggs - 4 item
  • vanilla - 2 tsp
  • grated carrots - 2 c
  • chopped walnuts - 1 c
  • crushed pineapple, drained - 8 oz
  • Bake at 350° in a 13 x 9 x 2-inch pan for 50 to 55 minutes
  • cream cheese - 8 oz
  • powdered sugar less if desired - 1 lb

How to make carrot cake:

Mix together the first 6 ingredients, then add the remaining 6 ingredients. Bake at 350° in a 13 x 9 x 2-inch pan for 50 to 55 minutes.Frosting:1/2 c. butter8 oz. cream cheese1 tsp. vanilla1 lb. powdered sugar (less if desired) Beat together until smooth.
