  • sugar - 2 c
  • cinnamon - 2 tsp
  • cream cheese
  • eggs - 4 item
  • vanilla - 1 tsp
  • salt - 1 tsp
  • flour - 2 c
  • stick margarine - 1 item
  • oil
  • grated carrots - 3 c
  • confectioners sugar - 3/4 1
  • baking powder - 2 tsp
  • baking soda - 2 tsp
  • crushed nuts - 1/2 c

How to make carrot cake:

Cream Cheese Frosting:8 oz. cream cheese1 stick margarine1 tsp. vanilla3/4 to 1 lb. confectioners sugar Mix together the sugar, oil, nuts, carrots and eggs; blend thoroughly. Add to mixture the flour, baking powder, baking soda, cinnamon and salt. Bake in greased 9 x 12-inch pan for at least 1 hour in a 350° oven. Good in layers also.

Frosting: Mix ingredients together. When cool, frost cake.
