  • cinnamon - 2 tsp
  • cream cheese - 6 oz
  • eggs - 3 item
  • vanilla - 1/2 tsp
  • salt - 2 tsp
  • chopped nuts - 1 c
  • flour - 3/4 c
  • butter - 4 Tbsp
  • baking powder - 1 tsp
  • pumpkin - 2/3 c
  • powdered sugar
  • ginger - 1/2 tsp
  • lemon juice - 1 tsp

How to make pumpkin cake roll:

Filling:1 c. powdered sugar4 Tbsp. butter6 oz. cream cheese1/2 tsp. vanilla Beat eggs at high speed for 5 minutes; gradually beat in 1 cup sugar. Stir in pumpkin and lemon juice. Stir together plain flour, salt, cinnamon, ginger and baking powder. Fold dry ingredients into pumpkin mixture. Spread on well greased and floured 15 x 10 x 1-inch pan. Top with chopped nuts. Bake at 375° for 15 minutes. Turn out immediately onto a dish towel sprinkled with powdered sugar. Roll towel and cake together, starting at long side. Cool and unroll; spread with filling. Re-roll in Saran Wrap and chill. Slice when ready to serve.
