How to make cajun fried chicken:

Remove giblets and necks, and rinse chickens with cold water. Drain cavities well; pat dry. Rub inside and outside of chickens with seasoning; set aside. Pour oil into a deep propane turkey fryer; heat to 350° according to manufacturer's instructions over medium-low flame. Place 1 chicken on fryer rod; carefully lower into hot oil. Fry 12 minutes or until a meat thermometer inserted in chicken breast registers 170°. (Keep oil temperature at 350°.) Remove from oil and drain. Repeat procedure for 2 remaining chickens. Cool slightly before serving.

Note: To make ahead, fry chickens and wrap in foil and then newspaper. Store in separate cooler from other cold items. For indoor preparation, fry chickens 1 at a time, in 3-quarts oil in Dutch oven. Yields 10 to 12 servings.
