Cajun fried catfish
Ingredients/Components
- milk - 1 c
- salt - 2 tsp
- vegetable oil - 3 c
- vinegar - 2 Tbsp
- large egg - 1 item
- garlic powder
- ground red pepper - 1 tsp
- prepared mustard - 2 Tbsp
- black pepper - 2 tsp
- fresh water catfish fillets about 1/2-inch thick, cut in 3-inch long pieces
- flour or corn meal
How to make cajun fried catfish:
Seasoning Mix:1 Tbsp. garlic powder2 tsp. salt2 tsp. black pepper1 tsp. ground red pepper Place fish pieces in a large bowl. Combine the seasoning mix ingredients in a small bowl. In separate bowl, combine 1 tablespoon seasoning mix with vinegar and mustard. Mix well. Reserve remaining seasoning mix. Spread the vinegar-mustard mixture evenly over fish, working it in with your hands to coat all pieces; set aside. In a medium bowl, beat egg white until frothy. Beat in the milk and 1 tablespoon seasoning mix. In a large plastic bag, combine the flour and the remaining 1 tablespoon plus 1/2 teaspoon seasoning mix, mixing well. Soak 1 batch of fish in the egg and milk mixture for a couple of minutes. Add the fish to the seasoned flour and dredge thoroughly. Let set about 5 minutes.Meanwhile, in a large, heavy skillet, heat oil over high heat to 280°. Add fish to hot oil; fry until dark golden brown, about 6 minutes. Drain on paper towels and serve immediately.
