  • flour - 1/4 c
  • chicken broth - 12 c
  • barley - 1 c
  • thyme - 1/4 tsp
  • stick butter or margarine - 1 item
  • stalks celery, diced - 4 item
  • medium onion, sliced - 1 item
  • sour cream or evaporated milk

How to make barley soup:

In large pan, melt butter or margarine. Add celery, onion and barley; saut? for 5 minutes. Turn down heat and quickly stir in flour. Add chicken broth. Bring to boil. Lower heat; cover and simmer for 1 hour, until barley is tender. Just before serving, add chopped parsley, thyme and sour cream or evaporated milk.
