Barley pilaff
Ingredients/Components
- butter - 1/4 lb
- chicken broth - 4 c
- mushrooms - 1/2 lb
- medium onions, chopped - 2 item
- pearl barley
How to make barley pilaff:
Saute mushrooms and onions in half of the butter. When tender, place in casserole. Cook barley in remaining butter over low heat, stirring constantly, until almond colored. Add to ingredients in casserole and mix together. Pour broth over all and bake for 1 to 1 1/2 hours at 350°. Cover for first half of cooking time.May be prepared ahead, adding liquid at cooking time. Serves 8.
