Ingredients/Components
- sour cream - 4 Tbsp
- salt - 1 tsp
- butter - 1/2 c
- pepper - 1/8 tsp
- mushrooms, sliced - 2/3 c
- onions, chopped - 2 c
- celery, chopped - 1/2 c
- carrots, chopped - 2 item
- stock - 8 c
- pearl barley - 3/4 c
How to make barley soup:
Simmer barley in 1/2 of stock until tender. Add butter gradually. Boil chopped vegetables until tender in remaining stock, then add cooked barley and seasoning. When ready to serve, add sour cream. Serves 6.Recipe categories: Grains, Soups & stews, Pasta, rice and grains.
