Ingredients/Components

  • sour cream - 4 Tbsp
  • salt - 1 tsp
  • butter - 1/2 c
  • pepper - 1/8 tsp
  • mushrooms, sliced - 2/3 c
  • onions, chopped - 2 c
  • celery, chopped - 1/2 c
  • carrots, chopped - 2 item
  • stock - 8 c
  • pearl barley - 3/4 c

How to make barley soup:

Simmer barley in 1/2 of stock until tender. Add butter gradually. Boil chopped vegetables until tender in remaining stock, then add cooked barley and seasoning. When ready to serve, add sour cream. Serves 6.
