Ingredients/Components
- pkg - 1 oz
- sour cream - 1/2 c
- grated carrots - 1 c
- chopped onion - 1/3 c
- can cream of chicken soup - 1 item
- cube margarine, melted - 1 item
- zucchini, sliced 4 or 5 c - 2 lb
How to make zucchini stuffing casserole:
Combine stuffing mix and melted margarine; mix. Put half of this mixture in bottom of greased 9 x 13-inch pan; set aside. In saucepan, combine zucchini, onions and salted water. Boil for 5 minutes. Drain and spread over stuffing mix. Combine sour cream, soup and carrots; mix. Spread over zucchini and top with remainder of stuffing mix. Bake at 350° for 45 minutes.
