Zucchini pickles
Ingredients/Components
- granulated sugar - 2 c
- salt - 1/4 c
- dry mustard - 1 tsp
- celery seed - 2 tsp
- white vinegar - 1 qt
- thinly sliced onions - 1 qt
- small zucchini, sliced thin - 5 lb
- turmeric ground - 2 tsp
How to make zucchini pickles:
Combine first 6 ingredients in a saucepan and bring to a boil. Pour over prepared zucchini and onions in large bowl and let stand one hour, stirring occasionally. In large saucepan, bring mixture to a boil and simmer 3 minutes. Continue simmering as you quickly pack hot sterilized jars. Makes sure vinegar solution tops pickles. Seal. Process 5 minutes.
