Zucchini stew
Ingredients/Components
- nutmeg - 1/8 tsp
- allspice - 1/8 tsp
- Italian seasoning - 1 tsp
- seasoned salt - 1 tsp
- tomatoes - 3 qt
- large zucchini - 1 item
- sweet peppers, diced - 2 c
- celery, cut into 1-inch pieces - 2 c
- onions, slivered - 1 c
- bacon or 1 lb - 1/2 lb
- hot pepper seeds - 1/8 tsp
How to make zucchini stew:
In 5-quart kettle combine tomatoes, onions, celery, peppers and spices. Cook on medium heat 35 minutes. Cut bacon into small pieces. Fry to brown and crispy. Add drained bacon and 2 tablespoons grease to stew.Cut zucchini down center lengthwise. Remove seeds and membrane. Cut into 1-inch cubes. Add to stew. Continue cooking until zucchini is soft. Stir often. Serve as side dish or with pastas or rice.
