Ingredients/Components
- sour cream - 1 c
- chopped onion - 1/2 c
- can cream of chicken soup - 1 item
- margarine, melted - 1/2 c
- carrots, shredded - 1 c
- summer squash, sliced - 6 c
- bag herb seasoned stuffing - 8 oz
How to make summer squash casserole:
Preheat oven to 350°. Mix stuffing with butter. Spread half of mixture in a 12 x 7-inch baking dish. Cook squash and onion in boiling water for 5 minutes. Drain. Mix soup, sour cream, carrots and cooked squash. Toss lightly to combine. Sprinkle remaining stuffing on top.
