Zucchini stew
Ingredients/Components
- salt and pepper to taste - 1 item
- large green pepper - 1 item
- medium zucchini - 2 item
- large onion - 1 item
- oil or less - 1/4 c
- hamburger beef, venison or elk - 2 lb
- large can or 4 fresh tomatoes - 1 item
How to make zucchini stew:
Brown meat in small amount of oil. Drain off oil. Add tomatoes. If fresh, slice or cut into chunks. Cut onion into chunks. Core (remove stem and seeds) pepper. Slice zucchini (without peeling). Add juice from tomato if canned, otherwise, use 2 cups tomato juice and 2 cups water. Simmer until vegetables are tender.May be done in crock-pot. Better each time reheated.
