Zucchini soup
Ingredients/Components
- chopped onion - 1/2 c
- can tomato sauce
- salt and pepper to taste - 1 item
- oregano - 1/2 tsp
- basil - 1/2 tsp
- can tomatoes - 1 1/2
- chopped green peppers - 1/2 c
- can of whole kernel corn - 1 item
- shredded zucchini and/or yellow summer squash - 1 2
- chopped celery, particularly the leaves - 1/2 c
- sweet Italian sausage or hamburg - 1 lb
- can mushrooms, or use fresh
- chicken bouillon cubes dissolved in 1 1/2 cups of hot water - 2 item
How to make zucchini soup:
Place all items in large soup pot and simmer for 1 hour. Granular chicken bouillon can be substituted for cubes or you can use can of chicken stock and eliminate the hot water.For a summer version: Use 4 cups zucchini, 4 fresh tomatoes (skin removed), fresh corn from cob. One 13 oz. can of Italian tomatoes can be used, eliminating the spices.
