Ingredients/Components

  • chopped onion - 1/2 c
  • can tomato sauce
  • salt and pepper to taste - 1 item
  • oregano - 1/2 tsp
  • basil - 1/2 tsp
  • can tomatoes - 1 1/2
  • chopped green peppers - 1/2 c
  • can of whole kernel corn - 1 item
  • shredded zucchini and/or yellow summer squash - 1 2
  • chopped celery, particularly the leaves - 1/2 c
  • sweet Italian sausage or hamburg - 1 lb
  • can mushrooms, or use fresh
  • chicken bouillon cubes dissolved in 1 1/2 cups of hot water - 2 item

How to make zucchini soup:

Place all items in large soup pot and simmer for 1 hour. Granular chicken bouillon can be substituted for cubes or you can use can of chicken stock and eliminate the hot water.

For a summer version: Use 4 cups zucchini, 4 fresh tomatoes (skin removed), fresh corn from cob. One 13 oz. can of Italian tomatoes can be used, eliminating the spices.
