Zucchini relish
Ingredients/Components
- sugar - 5 c
- salt - 5 Tbsp
- cornstarch - 2 Tbsp
- vinegar
- black pepper - 1/4 Tbsp
- celery seed - 2 Tbsp
- green pepper - 1 item
- red pepper - 1 item
- mustard seed - 2 Tbsp
- turmeric
- onions - 4 c
- zucchini or squash - 10 oz
How to make zucchini relish:
Mix together vinegar, sugar and cornstarch. Grind zucchini or squash coarse and mix salt in lightly. Let stand in icebox overnight. Add zucchini to mixture and heat until boiling. Stir all the time. Simmer 30 minutes. Seal in hot jars. Good on hot dogs, hamburgers and with beans.Recipe categories: Squash, Condiments, etc., Zucchini.
