Ingredients/Components

  • sugar - 1 c
  • cinnamon - 1 tsp
  • nutmeg - 1/4 tsp
  • dash of salt - 1 item
  • lemon juice - 2/3 c
  • zucchini, peeled and sliced as apples for pie - 8 c
  • Add sugar, cinnamon and nutmeg
  • 3 sticks oleo

How to make zucchini pie:

Combine first 2 ingredients and cook until tender. Add sugar, cinnamon and nutmeg. Cook a little longer. Remove from heat and add 1/2 cup of the crust mixture to thicken.Crust:4 c. flour2 c. sugar1 1/2 c. (3 sticks) oleo1 tsp. cinnamon dash of salt Mix ingredients together until crumbly. After removing the 1/2 cup to mix with the zucchini, take half of the remaining crust mixture and pat into pan. Bake at 375° for 10 minutes. Remove from oven and spread the zucchini filling. Take remaining half of crust mixture and sprinkle over top. Shake a little cinnamon over it. Bake at 375° for 30 minutes.

Optional: Powdered sugar glaze after removing from oven.
