Zucchini pie
Ingredients/Components
- salt - 1/4 tsp
- oil - 1/2 c
- eggs, beaten - 4 item
- Bisquick - 1 c
- pepper - 1/8 tsp
- sliced zucchini - 4 c
- dried parsley - 1 tsp
- Parmesan - 1/2 c
- finely chopped medium onion - 1 item
- Angostura Bitters - 2 tsp
How to make zucchini pie:
Mix together the zucchini and onion. Mix together Bisquick, Parmesan cheese, parsley, pepper and salt. Beat and mix together the eggs, oil and Angostura Bitters in a small bowl. (Bitters can be found in with soy sauces, Worcestershire, etc. or in the liquor department of any grocery store.)Pour egg mixture into the large bowl containing the Bisquick, Parmesan cheese and spices; mix well. Add the zucchini and onions. Fold in and pour into a 10-inch pie plate. Bake at 350° or less for 30 to 40 minutes.
Insert pick in center to test for doneness. If not done, turn oven down to 325° and bake until it is golden brown and "pick" comes out clean.
