Zucchini pickles
Ingredients/Components
- sugar - 5 c
- salt - 1/3 c
- cider vinegar - 6 c
- garlic salt - 2 cloves
- onions, sliced - 6 item
- mustard seed - 2 Tbsp
- turmeric
- green peppers, sliced - 2 item
- quarts zucchini chunks - 4 item
- chili peppers, use 1/4 liquid optional - 1/4 c
How to make zucchini pickles:
Do not peel zucchini, wash and cut and remove seeds. Add onion, pepper, garlic and salt. Cover with cracked ice. Mix and stand 3 hours. Drain. Combine vinegar, spices, sugar, chilies and liquid. Heat to boil. Add zucchini and reheat to boil. Lower heat and simmer briefly. Process. Makes 10 pints plus.Recipe categories: Squash, Condiments, etc., Vegetables.
