Squash casserole
Ingredients/Components
- pkg - 1 oz
- melted margarine - 1 Tbsp
- carton sour cream - 1 oz
- salt and pepper to taste - 1 item
- small onion, chopped - 1 item
- chopped pimiento - 2 Tbsp
- squash, sliced - 2 lb
- can cream of chicken soup, undiluted - 1 3/4
How to make squash casserole:
Cook squash and onion until tender in a small amount of boiling salted water; drain. Season with salt, pepper and 1 tablespoon margarine. Stir in chicken soup, sour cream and pimiento. Combine 1/2 cup margarine and stuffing mix, stirring until well blended.Combine half of stuffing mix and squash mixture. Spoon into 2-quart casserole dish. Top with remaining stuffing mix. Bake at 375° for 30 minutes. Yields 6 servings.
