Zucchini pickles
Ingredients/Components
- onions - 2 item
- c sugar - 2 item
- c cider vinegar - 3 item
- tsp mustard seed - 2 item
- tsp celery salt - 1 item
- tsp turmeric - 1 item
- c salt - 1/4 item
- firm zucchini - 2 lb
How to make zucchini pickles:
Cut zucchini into thin slices and cut onions in quarters. Slice onion very thin and add to zucchini. Cover with water and add salt. Let stand two hours and drain thoroughly.Bring remaining ingredients to a boil. Pour over zucchini. Let stand two hours. Bring all ingredients to boil and boil 5 minutes.
Pack into hot jars. Process in hot water bath for 15 minutes.
