Yellow squash casserole
Ingredients/Components
- pkg - 1 oz
- water - 1/2 c
- egg - 1 item
- butter, melted - 1/4 c
- can cream of chicken soup - 1 oz
- herb-seasoned stuffing mix - 1/2 c
- onion, finely chopped - 1/2 c
- yellow squash, sliced - 4 c
- small carrots, grated - 3 item
- round, buttery crackers, crushed - 1 doz
How to make yellow squash casserole:
In a 2-quart casserole, combine squash and water. Cover. Microwave at High (10) for 8 minutes. Stir after 4 minutes. Drain and coarsely chop.Place crackers in a greased 2-quart oblong glass baking dish. Combine cream cheese, soup, egg and butter. Beat with electric mixer at high speed for 1 minute. Stir in squash, carrots and onion. Spoon into prepared baking dish. Microwave at High for 12 to 14 minutes.
Sprinkle with stuffing mix. Microwave at High for 4 to 5 minutes. Let stand 5 minutes.
