Ingredients/Components
- eggs, beaten - 2 item
- cooking oil - 2 Tbsp
- chopped onion - 1/2 c
- salt and pepper to taste - 1 item
- can cream of mushroom soup - 1 item
- grated Cheddar cheese - 1 c
- cracker crumbs - 1/2 c
- medium yellow squash - 8 item
How to make yellow squash casserole:
Cook squash until tender; drain off water. Mash squash with potato masher. Add remaining ingredients and mix well. Top with more cracker crumbs, topped with dots of butter. Bake in a 375° oven for 30 minutes or until top is brown.Recipe categories: Eggs/dairy, Low calorie, Cheese.
