Tangy lemon bars
Ingredients/Components
- vanilla - 1/2 tsp
- chopped pecans - 1/2 c
- packed brown sugar - 1 c
- flour - 3/4 c
- butter - 1/3 c
- eggs, beaten - 2 item
- flaked coconut - 3/4 c
- baking powder - 1/4 tsp
- powdered sugar
- lemon juice - 2 Tbsp
- grated lemon rind - 1 tsp
How to make tangy lemon bars:
Frosting:1 c. powdered sugar1 tsp. grated lemon rind2 Tbsp. lemon juice Cut butter into flour with pastry blender until mixture resembles coarse meal. Press into ungreased 11 x 7 x 2-inch baking pan. Bake at 350° for 10 minutes.Combine eggs and next 5 ingredients in small mixing bowl. Mix well, then pour over warm crust. Bake at 350° for 20 minutes. Remove from oven and spread immediately with Lemon Frosting. Cut into bars.
Lemon Frosting: Combine frosting ingredients in small bowl. Blend well and frost top of bars.
